Settings, Apps, Default apps, then Gallery. Piktures reads the same photos Google Photos does.
Swap the Pixel Launcher
Install a launcher, then long-press Home and pick it, or use Settings, Apps, Default apps.
Theme the icons and the wallpaper
Download a wallpaper sized 1080 × 2424, then open the file in Piktures.
